Meat Your Expectations

4 Slices Sourdough Bread
1 Avocado
¼ Cup Mayo
6 Field Roast Lentil Sage Slices
4 Follow Your Heart Gouda Cheese Slices
1 Tomato
1 Cup Sprouts
2 Cups Butterhead Lettuce

To assemble sandwiches, spread mayo equally along two slices of bread.

Mash avocado and spread half one each piece of bread.

Slice tomato into thin pieces.

Layer field roast slices, cheese, tomato, sprouts, and lettuce on top of each piece of bread.

Top each sandwich with the other piece of sourdough, slice diagonally.

Serve with some of your favorite chips and enjoy your wonderful lunch.

I often crave a sandwich 2-3 times a week for lunch. While places have gotten better over the years, the vegan selections at most sandwich spots are abysmal. For instance, I once ordered the veggie sandwich from a restaurant and received what was a hoagie adorned with carrots, onions, and nothing else. Pretty sure it was the owner’s way of saying fu*k you but he could have at least made that the sandwich name. I would have gotten the hint.

It’s a struggle because just thinking about sandwiches now has me craving one. What makes the sandwich so desirable? Is it the bread? The condiments? The customization? The excuse to drink a sodie and munch on chips? One may never know.

Now, I love those ‘classic veggie’ hummus sandwiches and other vegan sandwich staples as much as the next gal, but sometimes I just want that lunchbox, minimal effort, delicious sandwich that I grew up having. Luckily, Follow Your Heart and Field Roast answered my prayers and provided me with perfect vegan sandwich materials. This sandwich brings a smile to my face every time I eat it and I know it will bring a smile to yours too.
