A bag of all trades



Instead of buying carton vegetable broth or buying veggies just to discard them after making broth, I save veggie scraps in a freezer bag. Once the bag is completely full, it’s broth time! I use an Instant Pot for out of sight and mind cooking as well as easy clean up. This broth can be used right away, or be frozen for later use. At the Anol Vegan, we utilize every part of the vegetable, saving you time and money.

Ingredients
1 Gallon Freezer Bag
Vegetable scraps: Onion skins and pieces, carrots, celery pieces and stalks, garlic peels and pieces, herbs (parsley, cilantro, thyme, rosemary)
8-10 Cups water

NOTE: DO NOT USE CABBAGE, BROCCOLI, CAULIFLOWER, BRUSSEL SPROUTS AS THESE WILL CREATE A BITTER AND SMELLY BROTH.

Method
Place scraps in Instant Pot and cover with water up to the max line.

Place lid on Instant Pot and select “slow cook” for 3 hours.

After 3 hours, strain broth.

Compost your scraps if possible. Store broth in fridge for a week or in the freezer for 5 months.

Keep in mind, this broth has not been seasoned with any salt or pepper. You can either season right away or season as you use the broth in a dish.



This recipe is a perfect example of what Greer and I have tried to implement at home during quarantine. Using every ingredient we buy to its full potential. Before this year, we were masters of buying groceries, living off them for a couple days, getting bored and ordering extremely expensive takeout. This year has really changed our perspective on living on budgets and minimizing trips to the grocery store. Truly nothing feels better than using every single grocery we buy. Optimal meal planning has definitely become our focus and it feels good to create a week's worth of meals while creating dishes that use the same ingredients. This broth has kept me from buying unnecessary items at the store and I’m excited to continue to build weeks of yummy food while minimizing waste.
