OUT OF PARM’S WAY




Recipe from “The Homemade Vegan Pantry” Miyoko Schinner’s Shaved Parm Recipe.

I highly recommend getting her book if you are serious about homemade vegan cheese goodness. This book is a staple in my kitchen and in my heart. This recipe requires a couple days headstart. So make sure your time frame fits in with your eating plans.

Ingredients
1 cup brazil nuts soaked overnight
½ cup pine nuts
½ rejuvelac or juice from sauerkraut
2 tablespoons white, yellow, or chickpea miso
1 teaspoon sea salt.

Method
Drain brazil nuts and place ingredients in a blender or food processor and blend for 1-2 minutes. I make mine currently in a food processor and it works fine, but I dream of what a vitamix could do.

Place mixture in a covered container and let rest at room temperature for 2-3 days. This helps the flavors sharpen. Sometimes I even leave it for 4 days. I like a sharp parm.

Preheat the oven to 250F and line baking sheets (you will need to use a couple) with parchment paper. Spread mixture to almost paper thinness.

Bake for 30 minutes, rotating after 15, until dry and golden brown.

Let it cool then break it up into pieces.




Viewing Highlight Number 1: The Sopranos
If it wasn’t for lockdown, I don’t think I ever would’ve made the time to watch this show. It wasn’t long after watching the first couple episodes that I became very thankful for all this free time we suddenly had. Truly what is better than being so hooked on a show that all of a sudden it’s 2AM and you hadn’t realized you watched 5 episodes? The thing I admire the most about HBO is no matter the year the show is released, the show is always groundbreaking television. They constantly push the limit and I admire that so much. They are the dream.

If this show hasn’t graced your screens yet I won’t give away spoilers. I’ll tell you what characters and episodes are my favorite. If winter proves to be what I think will be a second shut down, I highly recommend that you devote time to this gem of a show.

Favorite Characters
Carmela Soprano: I am on the Edie Falco bandwagon. I love this character so much. The rebellious housewife that loves her life too much to risk it all. I can’t even imagine the casting directors happiness when she saw Falco and Gandolfini on screen for the first time.

Adriana La Cerva: Favorite character by far and I will not be changing my mind. If you know, you know.

Favorite Episodes
Season 1, Episode 5: “College” This was the episode where it became apparent that I was on a wild ride and it was time to just sit back and enjoy. Tony and Carmela have impulses to cross the line the entire series, and this episode shows how no matter what they decide, their relationship is turmoil.

Season 2, Episode 12: “The Knight in White Satin Armor”
The only episode I can tolerate Janice.

Season 2, Episode 13: “Funhouse”
They took a huge swing with this episode and damn did it pay off. No character is safe in this show and they didn’t even give the audience time to recognize that.

Season 4, Episode 13: “Whitecaps”
Carmela and Tony fighting and winning Emmy’s like it’s effortless.

Season 5, Episode 12: “Long-Term Parking”
This one f*cked me up. I can’t even talk about it.

So much more I want to say but if you’ve made it this far without spoiling the show I don’t want to be the one that does it for you. Go watch it and then we can talk endlessly okay?
