Lean Green Salad Machine

Serves 2 as Meal or 4 as a Side
Total Time: 30 Minutes


Ingredients
For the Salad:
1 Bunch Kale Chopped
½ Cup Radiaccio Chopped
½ Cup Broccoli Chopped
½ Cup Carrot Chopped
½ Cup Shaved Almonds
½ Cup Dried Cranberries

For the Dressing:
3 Tablespoons Olive Oil
2 Tablespoons Lemon Juice
2 Teaspoons Ginger, Peeled and Minced
2 Tablespoons Maple Syrup
2 Tablespoons Dijon
2 Tablespoons Balsamic Vinegar
Salt, Pepper, Garlic Powder to Taste


Method
Prepare salad ingredients and place in a large bowl. Stir to combine

In a mason jar, combine all dressing ingredients, secure top and shake to combine.

Pour dressing over salad and mix to incorporate. Enjoy yourself.
Working from home has made meal prep all the more important. We made a real attempt this year at grocery shopping and preparing meals that would last us through the week.

Our efforts paid off surprisingly well. We’d get through many Monday-Friday's without ordering food, keeping true to the mantra, “there’s food in the fridge.” Now, I say Monday-Friday, meaning we would let loose a bit on the weekends. Sunday’s usually being our big day in.

We start our mornings with iced lattes from our favorite local coffee shop. Continue on to brunch, often in the form of a bagel, then snack on appetizers and beer through afternoon football. Depending on the night game, takeout usually finds its way to our apartment. Now you can see why Sunday’s are my favorite day.



We’ve crafted a wonderful treat yourself day, but it can create a harsh ‘back to reality’ come Monday morning. Luckily, we have this green machine salad to fall back on. Eating this refreshing chopped salad makes us feel good and propels us to finish our day strong. A nice ‘restart’ to the week. Ain’t no Monday gonna bring us down when you have this salad around.
